Aspiring young chefs at Beacon Academy enjoyed the opportunity to develop their fish food skills thanks to an initiative devised by the Food Teachers Centre and The Fishmongers’ Company’s Fisheries Charitable Trust.
As part of the group’s Fish In Schools Hero (FISH) programme, two groups of Year 10 GCSE Food Preparation and Nutrition students took part in an exciting two-hour masterclass, that enabled them to learn about, as well as prepare, cook and eat fresh, British fish and seafood.
In the masterclass led by Simon Gray from the Food Teachers Centre, the student chefs looked at different species of fish, molluscs and crustaceans, learning about their nutritional value, as well as methods for sustainable fishing and the importance of the MSC certified label. Simon Gray demonstrated fish preparation and made a range of dishes for the students to taste test, including Thai green mussels, calamari, and a fish goujon sandwich. He used his extensive knowledge to discuss with the Year 10 students how to access the higher-level marks at GCSE when building dishes with fish. In the second half of the session, the students were given whole fresh mackerel, which they gutted and filleted to create delicious bowls of pan-fried mackerel with a chorizo and chickpea stew.
